When Life Gives you Bananas, Make Banana Bread!

Last night, Ella and I made banana bread mini-loaves from some very ripe bananas. Ella enjoyed mashing the bananas with a fork (she said, "smoosh, smoosh, smoosh!" as she was doing it) and mixing the other ingredients together. We used the following recipe, courtesy of RecipeZarr:

Ingredients:
  • 4 very ripe bananas (we had 3)
  • 1 1/2 cups flour
  • 1 cup white sugar (that seems like a lot...next time I'll substitute more applesauce)
  • 2 T butter softened (used Smart Balance)
  • 1 t vanilla
  • 1 t baking soda
  • 1/2 t baking powder
  • 1 egg
  • 2 T applesauce
Directions:

1. Mash bananas in bowl.
2. Add and mix in remaining ingredients.
3. Pour into 2 greased loaf pans (or we used mini-loaf pans because they are faster to bake and can be easily shared with friends or frozen in manageable sizes)
4. Bake at 350 degrees for 50 minutes (minies only took 25) or until toothpick comes out clean.

On another note, when I was gathering the ingredients for our bread, Ella managed to get herself up onto a kitchen chair and settled in for an Elmo video on the "puter." She almost couldn't pull herself away from the screen to make bread with me.

    Looks like Mommy and Ella are really good cooks. I love the picture of the finish product. Ella really looks like she is really into her Elmo video. I just love, love, love the pictures of your beautiful little girl!
