I have been trying to be organized in my meal preparation by writing out a daily dinner menu in advance and grocery shopping for all of the ingredients. So far it's been going well---I sit down on a Friday and, after consulting the calendar for what events are happening each day (e.g., busy day, Rob working late, me going out, etc.), I use my recipe bookmarks on the computer or my cooking magazines to plan for about 3 weeks of dinners, making my grocery list as I go.
This has helped me tremendously as I felt like that dinner time hour was crazy to try to figure out what to make. Now I can thaw something the night before based on the menu and I do all of my dinner prep. in the morning when Ella is at school and Molly is napping. It makes meal time so much easier.
I also found a link on Pinterest (so addicting) for freezer crock pot meals---you chop up the veggies (and meat if using), measure out the spices, and add the liquids right into a freezer bag. Then the night before you want the meal, thaw the bag out in the fridge. In the morning, pour everything into a crock pot and your meal will be ready for dinner! I made 5 different meals (2 of each meal, so 10 meals total) yesterday, and plan on giving some to a friend and her family. The rest I'll save for other friends who might need a meal or for us if I'm in a pinch. Here are a few of the links I used:
