Blueberry Buckle

Today I went to a Giant Foods' nutrition class on glycemic index. The Giant in Willow Grove (and Camp Hill) offer nutrition and cooking classes and I've been to a lot of good ones. One of the recipes that was featured was blueberry buckle. I am not sure how it got its name...it seems like a blueberry coffee cake to me, but it was really tasty, nonetheless. I had some blueberries at home that needed to be used soon, so Ella and I tried out the recipe after her nap. We substituted Smart Balance for the shortening and half frozen blueberries for all fresh. Ella enjoyed mixing the flour, sugar, and cinnamon for the crumbly top, and, most of all, putting the blueberries on top of the batter--she said, "Wow" when we poured them all on, and then proceeded to push the blueberries down into the batter with her fingers to "get them in."


Blueberry Buckle
(serves 9)

Ingredients
:
  • 2 cups flour
  • 2 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup shortening
  • 3/4 cup sugar (in class we used Splenda--but I didn't have enough of that)
  • 1 egg
  • 1/2 cup milk
  • 2 cups fresh or frozen blueberries

Crumble Topping:
  • 1/2 cup flour
  • 1/2 cup sugar
  • 1/2 tsp cinnamon
  • 1/4 cup butter
Preparation:
  1. Preheat oven to 350 degrees. Combine flour, powder, salt in a bowl--set aside. In another bowl beat shortening, then add in sugar and egg--beat. Alternate between adding in milk and flour mixture and beat until smooth.
  2. Spoon batter into greased pan and sprinkle with blueberries. In another bowl, combine flour, sugar, cinnamon. Then cut in butter until it resembles coarse crumbs--sprinkle over blueberries.
  3. Bake for 50-60 minutes or until golden. Cool slightly and serve warm.

The house smelled so yummy and warm while the "buckle" was baking, especially great for the damp, rainy day we're having (where is the June weather). Ella told me, "Oops--we make big mess! Momma clean it up paper towels?" Yes, we made a floury mess, but had fun. I ended up sending the finished product in with Rob for him to share with his co-workers, so we'll get the taste test results later from a group of hungry engineers!

  2. Jennifer: I just love how Ella really gets into baking. Ella looks so serious as she prepare her dishes. The finish product really looks wonderful. Also, great pictures of Ella as usual.

  3. Jen and Ella...great job, the end result looks amazing! of course, John would be so impressed with you advertising for Giant..keep his paycheck coming, right. Although he was bummed that he was supposed to come down to Willow Grove's giant to meet w/ the managers last week but they cancelled. Zach and I may have to try out this recipe...and thanks for letting me know how you "lightened" the recipe!
